Cheese has been enjoyed with wine for centuries. Part of the reason for this affinity is they are both the product of fermentation and they can be aged for extended periods to produce complex flavor experiences. But like wine, most cheeses are meant to be enjoyed in their youth when freshness is at it’s peak.
